“Exceptional Coffee for the Adventurous Explorer”

This is the most uniquely tropical, experimental coffee we’ve ever offered at Square One. We recommend enjoying it without any additions (but we’d also never judge you).

Brayan Alvear is a proud native of Acevedo, Huila, Colombia whose roots run deep in coffee cultivation. From a young age, Brayan soaked up coffee wisdom like a sponge from his father’s after-school lessons. Little did he know, those coffee chats would ignite a fire within him. Now, alongside 60 like-minded souls (including his own kin), Brayan is on a quest to share their prized coffee cherries with the world. It's no easy feat, but they're up for the challenge.

These beans get the royal treatment, resulting in flavor profiles that'll knock your socks off. The process begins with a 24-hour pre-fermentation, which enhances the flavor. Then comes a cherry aerobic session that lasts for 24 hours. The cherries are depulped and then infused with dehydrated passion fruits for a 5-day anaerobic fermentation that enhances the flavor intensity. The process concludes with a mechanical drying process that takes 10 days and a 5-day flavor maturation period.

It is important to note this coffee was intentionally processed utilizing anaerobic fermentation. We find that anaerobically-fermented coffees often exhibit an increase in the intensity of fruit flavors, acidity, and a slight increase in the body.

Brewing Recommendations: Overall, our favorite cups of this coffee have involved minimal agitation and shorter contact times. Less is more. Let the coffee do the work/werk. We’ve enjoyed a 1:16 coffee to water ratio with most methods, but we’re using the following recipe at our café:

RECOMMENDED RECIPE via the SIMPLIFY Brewer:

15g finely ground coffee

230g hot water

  1. Set a paper filter in SIMPLIFY the Brewer and rinse the filter (or not if you are lazy).

  2. Pour water at the center of 15g fine ground coffee. (No circular motion!)

  3. Pour 230g of water for 30 seconds.

  4. Wait for 60 to 90 seconds until all the water drips from the brewer.

  5. Serve and enjoy!
